Ginger Lemon Cookies

Recipe:
2 ¼ cups flour
½ tsp salt
2 tsp ginger
1 tsp cinnamon
1 cup butter, softened
½ cup granulated sugar
½ cup brown sugar
1 tsp lemon zest
1 tsp vanilla extract
1 egg, room temperature
1 ½ tsp baking soda
Instructions:
Combine butter and granulated sugar and beat with an electric mixer on medium until light and fluffy.
Beat in your egg, brown sugar, and vanilla until combined.
Mix dry ingredients in a seperate bowl. Add slowly to wet ingredients until a dough forms.
Roll dough into tablespoon sized balls and press down to flatten. Place in the fridge to rest for 45 minutes.
Bake for 10-13 minutes at 350 F.
